个人简介

郑家宝,副研究员,博士生导师,食品科学与工程系副主任。2022年博士毕业于华南理工大学和比利时根特大学,取得华南理工大学和根特大学双博士学位(食品科学与工程/Food Sciences and Nutrition)。入选“中国博士后创新人才支持计划”和 “广东省科协青年科技人才培育计划”。目前担任中国畜产品加工研究会青年工作委员会委员、一区TOP期刊Journal of Future Foods青年编委。主要从事食品生物大分子液-液相分离的基础理论(热力学与弛豫动力学)与前沿应用(超高蛋白食品、仿生人造细胞、3D生物打印、可降解生物塑料等)研究。以此为基础,主持国家自然科学基金面上项目和青年项目、国家重点研发计划子课题、广东省自然科学基金面上项目、粤穗联合基金青年基金项目、中央高校基本科研业务费面上项目等十余项科研项目。此外,申请人还参与多项健康食品的创新开发并取得显著成果转化。相关成果在Small、Aggregate(TOP5高被引论文)、Biomacromolecules(封面论文)、Advances in Colloid and Interface Science、Journal of Agricultural and Food Chemistry(封面论文)、Food Hydrocolloids、Food Chemistry等学术期刊发表论文40余篇,引用1800余次。
