A Splendid Speech Presented by Prof. Alain LEBAIL

 Alain LEBAIL, a professor comes from Nantes-Altantic National College of food Science and Engineering and Veterinary Medicine (ONIRIS), France, visited our school from 9th April to 12th April, 2018. During the visit, he and his PhD student presented three public seminars and communicated the problems and challenges of food freezing with the students in depth. Prof. LEBAIL was invited by Associate Professor Zhiwei Zhu from School of Food Science and Engineering, South China University of Technology.

 At 9:30 am of 10th April, Prof LEBAIL gave a presentation with the topic “Freezing under electric and magnetic field”. This presentation proposes a review based on existing literature as well as some very recent results on the mechanism and benefits of freezing under static electric field, magnetic field and microwave conditions. At 2:30 pm on the same day, his PhD student Piyush JHA gave another presentation based on his own research results. The topic of the presentation is “Microwave assisted freezing of fruits and vegetables; some results from FREEZINGWAVE H2020 project. The last presentation was given by Prof LEBAIL at 10:00 am of 11th April in Dongtang hall of the Academic of Food Science and Technology. This presentation provided an overview on how stress and strain develop during food freezing, and in which conditions internal cracks my appear in foods during freezing. During the presentation, Prof Lebail on behalf of the chairman of 32th EFFoST International Conference invited the teachers and graduate students to attend the conference held on Nov in Nantes.

After these presentations, Prof LEBAIL and his PhD student answered the students’ questions, discussed the existing problems of novel food freezing techniques, and gave their advices and some skills about how to deal with the difficulties during the research. The visit of Prof LEBAIL provides an excellent opportunity to communicate and cooperate with ONIRIS and the national scientific council for research (GEPEA) in France.(by Dongmei Li)
