Dr E. Simone is a teacher of School of Food Science and Nutrition, University of Leeds. She got her Chemical Engineeringdoctor degree in Oct 2015 from Loughborough University, UK, and hertitle of the PhD thesis was “Application of PAT tools for a better understanding and control of the crystallization process of polymorphic and impure systems”.Now her research involves understanding the phenomena of polymorphism, nucleation and crystal growth of pharmaceuticals and food crystals (e.g. fats, sugars) using on-line, in situ, analytical techniques as well as off-line solid state characterisation; developing strategies to effectively control crystal size, shape and polymorphism during crystalliation processes, combining experimental and modelling work.
